  The word Christmas originates from the Greek word for calendar and enters the Bulgarian language after the assumption of Christianity as the official religion of the state. The sound similarity between the Bulgarian word for Christmas “Koleda” and the Bulgarian word for slaughter “kolitba” is not accidental – it is that specific time of the year when we eat delicious pork prepared on fire!

  On Friday evening guests are accommodated in the hotel of the Complex. We have arranged for you a calm evening in the cosy atmosphere of the restaurant.
  In the early Saturday morning guests can submerge into the authenticity of the Bulgarian Christmas tradition including: slaughtering and singeing of the pig as well as the very preparation of the dishes: fresh kebap and pork legs prepared on fire.

  You will witness an overall ritual where nothing is missing: neither the delicious dishes of fresh pork, nor the beverages – warmed rakia and sparkling red wine, nor the merry songs and funny stories, nor the cosiness coming from the cracky fire in the fireplace.
